Juicy Juice Mango Cake for Mother’s Day

Every Mother’s Day my boys want to make sure I have a great day, they make homemade cards, attempt to make me snack and allow me to put my feet up and indulge in some relaxation. They wanted to make a cake to celebrate the day, so we decided to try putting a tropical spin on a plain yellow cake using one of our favorite Juicy Juice flavors; mango! We created a spongy delicious Mango Cake!

Ingredients:

  • box of yellow cake mix
  • box of instant vanilla pudding
  • 4 eggs
  • 1/2 cup vegetable oil
  • 1 cup cold water
  • spray oil
  • 1 cup Juicy Juice mango juice
  • 1/2 cup butter
  • 3/4 cup white sugar
  • 1 ripe mango
  • confectioners sugar

Tools:

  • electric mixer
  • mixing bowl
  • bundt pan
  • saucepan
  • wood dowel/skewer or fork

  1. Preheat oven to 350 degrees, grease bundt pan with spray oil
  2. Combine the cake mix, pudding mix, cold water, 1/4 cup of Juicy Juice mango juice, eggs and oil together in mixing bowl. Mix with electric mixer on medium for about 2 minutes. Pour batter in the bundt pan
  3. Bake for 30 minutes or until knife inserted in cake comes out clean.

4. Combine the butter/margarine, white sugar & remaining Juicy Juice mango juice (3/4 cup) into a saucepan. Boil this mixture for about 2 minutes stirring occasionally.

5. Take cake out of the oven and use a wooden dowel/skewer or fork to poke holes in the top of the cake while it is still warm. Pour the mango juice mixture over the cake. Once the cake is completely saturated, flip it on to a flat plate.

6. Dust the cake with some confectioners sugar. Slice up the mango and arrange the slices on top of the cake.
